Mixer Dough Hook Pizza

Combine flour and malt in bowl of stand mixer fitted with dough hook. In small bowl combine yeast and cup warm water 85 90 f. Add the olive oil and the 3 1 2 cup flour salt mixture to the yeast mixture. Gradually increase the speed to medium until a ball forms.
While stirring the dry ingredients pour the oil and water in a slow steady stream. Add salt olive oil and 2 1 2 cups flour. Let the mixture stand until the yeast comes alive and starts to. Continuing on speed 2 add the remaining flour 1 tablespoon at a time until a dough ball forms that clings to the dough hook and cleans the sides of the bowl.
Using the dough hook from the mixer stir until a loose dough forms. Instructions in the bowl of a stand mixer fitted with the dough hook attachment stir together the yeast warm water and sugar. Turn mixer speed to medium and knead with the dough hook until the dough forms a ball. Insert the dough hook.
Add salt olive oil and 2 1 2 cup flour. Let rise for about 5 10 min until foamy. If the dough is too sticky add additional flour mixing between each addition. Dissolve yeast in warm water in warmed bowl of electric stand mixer with dough hook atttachment.
Whisk vigorously for 30 seconds.
